Ingredients

  • 1 1/2 cups all purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt avocado
  • 1 tablespoon granulated sugar
  • 1 1/4 cups whole milk
  • 1 egg
  • 3 tablespoons melted unsalted butter Plus more for cooking.
  • 1 teaspoon Vanilla Bean Paste Vanilla extract will work as well.

Instructions

  • Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  • Combine Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  • Create the Batter: Pour the wet ingredients into the dry ingredients and gently fold them together using a spatula. Be careful not to overmix—lumps are perfectly fine! Overmixing will result in dense pancakes.
  • Let the Batter Rest: Allow the batter to rest for about 5–10 minutes. This helps the baking powder activate and ensures your pancakes will be extra fluffy.
  • Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to look set, about 2–3 minutes. Flip and cook for another 1–2 minutes until golden brown.
  • Serve Immediately: Serve your pancakes warm with your favorite toppings.
