Leftover Sheet Pan Nachos

I swear I’m a sucker for an easy dinner, and you can’t get much easier than this! We eat tons of nachos in our house anyway – and we’re always looking for extras that we can pile on.  These are perfect for weeks that you make tacos or chili, have pinto beans… anything you can find really works!

Line a pan with foil and cover in tortilla chips.

Slather on a decent amount of refried beans.

Add taco meat, sprinkling on top. You could also choose chopped brisket, leftover sloppy joe mix, some rotisserie chicken, leftover fajita meat… whatever you can find.

Vegies? Sure! Diced onions? absolutely! Got any red or green bell peppers? Slap those on there. Want some chives? Sure! Don’t have those? No problem. Jalapenos? Why not?! Got any other peppers? That’d be super tasty? Kids don’t like peppers? Only do half!

Beans! Beans! The magical fruit! Sprinkle some of those leftover pinto beans from this week’s meal plan! 

Then load those bad boys up with some cheese… cheddar, jack, swiss, a blend… whatever you’ve got… just load it up goooood!

Sprinkle with some cilantro unless you think cilantro tastes like soap. Don’t eat soap.

Bake for about 15-20 minutes in a 350F oven until cheese is melty and bubbly.  Take them out of the oven and tell no one they are ready and devour seven nachos before anyone has a chance to get the good ones. That’s called winning.
