Ingredients
12ouncesPenne Pasta(sliced)
1linkAndouille Sausage, sliced(stems removed)
1tbsolive oil
3clovesgarlic(room temperature)
1can (14 oz)Diced Tomatoes (drained, but reserve juice)
1/2cupGrated Italian Blend Cheese(to taste)
1/2cupFreshly Shaved Parmesan
Salt and Pepper
Red Pepper Flakes *optional
1tbspDried Italian Seasoning/Herbs
Instructions
Generously salt a pot of water. Bring to boil, and cook penne pasta al dente (for about 7-8 minutes) as it will continue cooking in the pan with the sausage.
Slice the sausage, add the olive oil to the pan, and cook the sausage until it is browned on both sides.
Once the sausage is browned, add the tomatoes and garlic. Cook until warmed through.
Once the pasta is cooked, use a slotted spoon to place the pasta into the pan with the sausage and tomatoes.
Add the cheese blends and any of the reserved tomato water if the mixture is too thick.
Add the dried herbs and optional red pepper flakes if you want a kick of heat.
Cook until cheese becomes melty and all ingredients are warmed through.
Sprinkle with additional parmesan cheese after plating and enjoy!
