This Simple Sausage Penne Pasta recipe is a fantastic option for busy weeknights when you need a satisfying meal in a hurry. Ingredients
  

  • 12 ounces Penne Pasta (sliced)
  • 1 link Andouille Sausage, sliced (stems removed)
  • 1 tbs olive oil
  • 3 cloves garlic (room temperature)
  • 1 can (14 oz) Diced Tomatoes (drained, but reserve juice)
  • 1/2 cup Grated Italian Blend Cheese (to taste)
  • 1/2 cup Freshly Shaved Parmesan
  • Salt and Pepper
  • Red Pepper Flakes *optional
  • 1 tbsp Dried Italian Seasoning/Herbs

Instructions
 

  • Generously salt a pot of water. Bring to boil, and cook penne pasta al dente (for about 7-8 minutes) as it will continue cooking in the pan with the sausage.
  • Slice the sausage, add the olive oil to the pan, and cook the sausage until it is browned on both sides.
  • Once the sausage is browned, add the tomatoes and garlic. Cook until warmed through.
  • Once the pasta is cooked, use a slotted spoon to place the pasta into the pan with the sausage and tomatoes.
  • Add the cheese blends and any of the reserved tomato water if the mixture is too thick.
  • Add the dried herbs and optional red pepper flakes if you want a kick of heat.
  • Cook until cheese becomes melty and all ingredients are warmed through.
  • Sprinkle with additional parmesan cheese after plating and enjoy!
