🥓 Start by browning some pancetta or bacon. However much you have or want… it’s bacon. You can do no wrong!
🧄 After a few minutes, add some minced garlic. We love garlic, so I’ve used upwards of 5-6 cloves before! Or maybe 7-8. Live your best garlic life.
🍝 Boil the fettuccine in salted water… save the pasta water!
🥚 Mix 2 eggs with a heaping 1/4 cup very finely grated Parmesan cheese.
👩🍳 When the pancetta/bacon/garlic is brown and crispy and the pasta is al dente, use tongs or one of those teethy pasta things that grab the noodles and put them into the pan with the bacon and garlic. Turn off the heat and stir briskly.
👩🍳 Slowly add a ladle full of the pasta water to the egg/cheese mixture. Then add the cheese egg mixture to the pan of noodles.
🍗 I added precooked diced chicken (from Costco!) to make it super easy!
👩🍳 If it is too thick, use more pasta water to get the consistency that you would like.
🌶 Optional: sprinkle with some crushed red pepper flakes.
🥖 Serve with whatever bread you can find smothered with butter and garlic seasoning because carbs need carb friends.
