Recipe Review: Ina’s Skillet-Roasted Chicken and Potatoes

I am obsessed with everything Ina. There aren’t very many of her recipes that I’ve tried and did not like. Sometimes she gets a little fancy for me, but this recipe is simple AND affordable. Even better – it is a literal one pan meal. Can’t beat that! I saw her make this on her Food Network show and immediately added the ingredients to my grocery list.  It was a crowd pleasing hit here in our house – so much so, that one of the chickens didn’t even last long enough for me to get pictures!

I marinated mine in the buttermilk overnight.
LOL – notice that one went missing! They were that good!
Took the chicken off and set aside, added the potatoes. I was afraid of the chicken drying out, so I let the potatoes bake by themselves for about 25 minutes and then put the chicken back on top for the last 10. Perfection.
The flavor from the mustard made these absolutely delicious!
