Super Simple Sausage Penne Paste

Ingredients
- 12 ounces Penne Pasta (sliced)
- 1 link Andouille Sausage, sliced (stems removed)
- 1 tbs olive oil
- 3 cloves garlic (room temperature)
- 1 can (14 oz) Diced Tomatoes (drained, but reserve juice)
- 1/2 cup Grated Italian Blend Cheese (to taste)
- 1/2 cup Freshly Shaved Parmesan
- Salt and Pepper
- Red Pepper Flakes *optional
- 1 tbsp Dried Italian Seasoning/Herbs
Instructions
- Generously salt a pot of water. Bring to boil, and cook penne pasta al dente (for about 7-8 minutes) as it will continue cooking in the pan with the sausage.
- Slice the sausage, add the olive oil to the pan, and cook the sausage until it is browned on both sides.
- Once the sausage is browned, add the tomatoes and garlic. Cook until warmed through.
- Once the pasta is cooked, use a slotted spoon to place the pasta into the pan with the sausage and tomatoes.
- Add the cheese blends and any of the reserved tomato water if the mixture is too thick.
- Add the dried herbs and optional red pepper flakes if you want a kick of heat.
- Cook until cheese becomes melty and all ingredients are warmed through.
- Sprinkle with additional parmesan cheese after plating and enjoy!
