Ingredients

  • 1 1/2 cups all purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt avocado
  • 1 tablespoon granulated sugar
  • 1 1/4 cups whole milk
  • 1 egg
  • 3 tablespoons melted unsalted butter Plus more for cooking.
  • 1 teaspoon Vanilla Bean Paste Vanilla extract will work as well.

Instructions

  • Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  • Combine Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  • Create the Batter: Pour the wet ingredients into the dry ingredients and gently fold them together using a spatula. Be careful not to overmix—lumps are perfectly fine! Overmixing will result in dense pancakes.
  • Let the Batter Rest: Allow the batter to rest for about 5–10 minutes. This helps the baking powder activate and ensures your pancakes will be extra fluffy.
  • Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter. Pour 1/4 cup of batter onto the skillet for each pancake.
