We’ve got a super busy this week here in our house. John is going out of town Wednesday through next Sunday, so I needed some super easy meals that didn’t take a ton of time or pots and pans! I also wanted meals that would provide us with plenty of letovers so that I’m not having to prepare a bunch of lunches as well. Oh. I’m also gonna need someone to come over and stop me from full on decorating for Christmas while he’s gone! Ha!

Tuna was on sale this week at our grocery store, so this was the perfect opportunity to have this easy healthy salad.
Friday:
Whole 30 Spaghetti Squash “Alfredo”
Coconut Milk and an egg sub for the Alfredo sauce in this delicious and super healthy version of the classic. Trust me. You’ll make this again even if you aren’t doing Whole 30.
Friday’s Cocktail:
Bourbon Ginger Apple Cider
This is a super simple, but clever little cocktail that politely nods as fall steps in. Cold and bubbly… with a little bite from some ginger beer. Cheers!
Saturday:
Texas Game Day Chili
A little cold front came through… and you know what that means?!?!? It’s Texas Chili time y’all!
